Trail Practice Organizes Ypseli Hybrid Dining Space in Central Paris
High is combined restaurant and deli located on its 2nd floor Paris, France. The project occupies the ground floor of a 19th-century Beaux-Arts building, close to the shopping district of Rue Montorgueil. The design introduces a modern interior within the existing historic structure, establishing a distinct spatial identity through material, color and organization.
Developed by Trail Practice in collaboration with founders Symeon Kamsizoglou, Delphine Pique and chef Frangiskos Dandoulakis, the project combines hospitality, retailand dining functions in a single layout. The existing architectural shell is preserved, with structural elements as exposed concrete blocks that remained visible. In this context, an independent steel The shelf grid is introduced as the main organizational system. The grid defines the deli area as a three-dimensional display field, allowing for flexible layout and future customization.

Red floor and sculptural volumes form the internal arrangement of the High
A central design element is a continuous red surface that forms an independent spatial layer within the interior. This intervention functions as both a floor and an organizational layout, structuring circulation and defining zones. The sculptural volumes embedded in this red base serve service functions and guide traffic along a peripheral path leading to the central bar.
The spatial sequence is further articulated through a linear mirror suspended above the rod. This element reflects the activity throughout the space, visually expanding the interior while creating a connection between the restaurant and delicatessen areas. Due to the compact and polygonal layout, traffic is organized along four primary axes, allowing clear movement between different zones. The large facade openings introduce natural light and maintain visual continuity with the surrounding landscape.
THE design team in Trail Practice selects a selection of material that refers to Mediterranean construction without direct reproduction. The red floor is combined with ocher tones, while the marble surfaces come from quarries in Dionysos, Tinos and Eretria. Steel elements and reused marble components contribute to a consistent material palette throughout the project. The design integrates catering, retail and storage functions into a unified spatial system. Through its organization and material strategy, Highness translates elements of Greek hospitality into a modern interior context.
